Oh I would love to visit all civilizations if I could but if I had to pick just one I would probably go with Egypt so I could watch the Pyramids being built (I know they were built over hundreds of years but I have a time machine). I would want to know for sure how they were made, why they were made i.e. what was their original purpose.
